Why would you want to eat so many cucumbers, so often? Would you be surprised to know I love cucumbers? Some of life's lessons come to us in food. Well, some foods come to us and we can be happy about that. Take the cucumber, cool as a, ____. Yes, a cucumber. It's a no pressure, able to cope with any food emergency, welcome guest at the dinner table.
We know cucumbers are not very competitive in providing vitamins and minerals. It's main contributions are water and roughage. But they do "work well with others." I love them in salads of all kinds. Tasty, delicious cucumbers. Hurray for cucumbers.
Here is a recipe...variation.
Cucumber foodie favorite number 1. Cucumbers in salad!
Here is how: Begin with the dressing in the bottom of a large bowl. You can use a favorite, or make this one.
- 2 T. olive oil
- juice of 2 limes or 3 T. vinegar
- 1 T. real maple syrup
- 1/2 t. salt
- Blend well
Add 1 cup cooked, and cooled quinoa (couscous, pasta, rice) Rinse in cool water before cooking. Bring to boil in 3 c. water. Turn heat to very low, cover with lid allow to sit for 20 minutes.
Follow with 1/4 c. - 1/2 c. of any of the following chopped, diced or sliced:
- frozen corn
- diced bell pepper
- green onion
- canned, drained, black (any color) beans
Toss, salt to taste.
My secret is: Toss in the veggies until it looks pretty, then stop.
